  1. Use as little sugar as possible. Learn to train your tastebuds to enjoy different flavour profiles - the sugar should just be the foundation these flavours stand on.
  2. Always use unrefined sugar: jaggery, panela, rapadura or coconut sugar, or even honey or malt extract (for example, in banana cake). They add complex flavours and many minerals to your baked products.
  3. Use butter generously - it adds flavour and richness. Fat is not your enemy. Use organic butter from grass-fed cows. Take it out of the fridge well before time, so that it can soften.
  4. Always use wholemeal flour.
  5. Use aromatic spices. For example, cardamom in tea cake and cinnamon twist, nutmeg in banana cake and cinnamon in apple cake and cinnamon twist.
  6. All ingredients must be organic.
  7. If organic vanilla extract is not available, don’t use it. It is not strictly needed in any of the recipes.
  8. Avoid all artificial flavours (and colours) at all cost.
  9. Use nuts generously. They are a great way of adding taste and richness to your baked products (banana cake, apple cake, nut cake).
