How to prepare green beans so that they retain most of their nutrients
Place topped and tailed beans, broken into small pieces in rapidly boiling, lightly salted water for 3-5 minutes, depending on how tender they are, so that they retain their crunch and bright green colour. Then you can either place them in salted butter with fresh herbs and lots of black pepper, or in sesame oil, topped with sesame seeds, black pepper and soy sauce. Add freshly grated garlic to flavour them, if you like.
