  1. Use instead of rice, have them with dals.
  2. Try millet dosa and idli - they have worked quite well in my experience.
  3. Ragi porridge is a quick and easy warm breakfast.
  4. Try to make rotis. They will come out thick and might break a bit, but have wonderful flavours of their own. The trick is to use hot water and some ghee to make the dough and let it rest for at least 15 minutes before rolling. We had bajra rotla - pearl millet rotis in Gujarat. Absolutely delightful!
  5. Use them as a base for cold meals for lunch. Cook any millet by boiling it in 3 times the volume of water. Let it cool down completely. Transfer to a bowl. Add lemon juice, black pepper, 1/2 tsp turmeric powder - and salad items of your choice - tomato, cucumber, avocado, cabbage, radish. Sprinkle seeds on top. Add fresh mint or coriander or any other herb of choice.
  6. Make kheer with them.
