You will need (for about 8 portions):

  • 200g wholemeal flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 200 g walnuts, chopped
  • 100g butter, softened
  • 60g any unrefined sugar (minimise!)
  • 5-6 tsp instant coffee powder, decaf if preferred, especially if sharing with children.

Steps

  1. Preheat the oven to 160 degrees C
  2. Mix all the ingredients together.
  3. Place in a baking tray and bake for 45 minutes.
  4. Switch the oven off and let the cake be inside for another ten minutes.
  5. Serve warm.

Notes

This cake is very heavy on fats. It is a pleasure having it fresh and warm. The coffee just adds a bitter flavour in the background.

Sugar should be minimised so that the flavour of the roasted walnuts, the coffee and the butter can shine.
