Coffee Walnut Cake
You will need (for about 8 portions):
- 200g wholemeal flour
- 1 tsp baking soda
- 1/2 tsp salt
- 200 g walnuts, chopped
- 100g butter, softened
- 60g any unrefined sugar (minimise!)
- 5-6 tsp instant coffee powder, decaf if preferred, especially if sharing with children.
Steps
- Preheat the oven to 160 degrees C
- Mix all the ingredients together.
- Place in a baking tray and bake for 45 minutes.
- Switch the oven off and let the cake be inside for another ten minutes.
- Serve warm.
Notes
This cake is very heavy on fats. It is a pleasure having it fresh and warm. The coffee just adds a bitter flavour in the background.
Sugar should be minimised so that the flavour of the roasted walnuts, the coffee and the butter can shine.
