Love ice cream?

Ice cream is not really on the ‘positive foods’ list for various reasons - it’s cold, has too much sugar and the fact that it has many, many unnecessary artificial ingredients…

The next time you buy it, do look at the list of ingredients. It might scare you.

I like ice cream and I’m happy to have it from time to time.

Here’s a simple recipe.

You will need:

  • 1L milk
  • 300 ml cream
  • 3-4 tablespoons sugar
  • Optional: grated chocolate, vanilla extract, (decaf) coffee powder

Steps

  1. Pour the milk into a broad, heavy bottom pan. Bring to boil, stirring continuously. Reduce the heat to medium and keep stirring until the milk has become about one third the volume. (The milk will condense further as it cools down.)
  2. Add 3 tbsp sugar and mix well.
  3. Allow to cool down to room temperature, then transfer the condensed milk into another container and put in the fridge.
  4. Once the condensed milk is chilled, beat the cream and then mix it in with the condensed milk with a spoon. (For beginners: If you continue beating cream beyond a certain point, it will become butter!)
  5. Add one tsp vanilla extract for plain vanilla ice cream. To the same, you can add grated chocolate (buy good quality dark chocolate and grate it fresh) to make chaco-chip ice cream. Add instant coffee powder to make coffee ice cream.
  6. Transfer to small containers so that each container has one to two portions of ice cream.
  7. Freeze. Because we didn’t put any fluff in the ice cream, it will be quite hard when it comes out of the freezer. Allow 5 minutes before serving.
